May contain parasites (flukes, roundworms) and bacteria. Some raw fish (salmon, trout) can carry bacteria that cause salmon poisoning, which can be fatal. Always cook fish thoroughly.

Symptoms to Watch For

Vomiting, fever, enlarged lymph nodes, salmon poisoning (potentially fatal).

Risk of parasites and bacteria. Some raw fish contain thiaminase, an enzyme that destroys thiamine (vitamin B1). Raw, sushi-grade fish is a low risk occasionally, but cooked is safer.

Symptoms to Watch For

Thiamine deficiency, parasitic infection.
